Bay 51 is our take on a sweet chilli sauce — smooth, glossy, and quietly complex — inspired by flavours that feel familiar, yet slightly… unexplained.
Built for balance rather than burn, this sauce blends gentle heat, savoury depth, and a lingering sweetness that makes it dangerously easy to keep pouring. It doesn’t shout. It doesn’t rush. It just works its way into everything.

Flavour Profile
Sweet and tangy up front, with a soft chilli warmth that stays controlled and comforting.
Dried Purple UFO chillies bring a mild, fruity heat, while white miso adds a savoury umami layer that sets Bay 51 apart from standard sweet chilli sauces. Garlic and ginger sit quietly underneath, rounding everything out.
Smooth, lightly thickened, and glossy — perfect for coating, glazing, and dipping.
