Bay Verde takes its cue from chimichurri, but this isn’t your average drizzle. Zesty tomatillos, fresh green pepper, and a wall of herbs come together with sharp vinegar and lime to create a sauce that cuts through rich food like a blade. Rocoto chillies bring a gentle warmth that keeps the flavour bold without overpowering.
